Panned Cheesy Sourdough Breadsticks

Yield 18 x 13 pan

Ingredients

  • 2 cups Water, warm

  • 1 tbsp Active dry yeast

  • 1 tsp Granulated sugar

  • 1 cup Sourdough discard

  • 5 – 5 1/2 cups Bread flour

  • 1 1/2 tsp Salt

  • 1 tbsp oil + more for pan

  • 1 tbsp Diastatic dry malt powder

Directions

  • Sprinkle yeast and sugar over water and let set 10 minutes, until foamy.
  • Add the rest of the ingredients to the yeast mixture, incorporate well and knead for 6 minutes.
  • Put dough into a well oiled bowl, cover and let proof 1 – 1/2 hour in warm place (oven with the light on).
  • Oil your sheet 18 x 13 inch sheet pan very generously! dump your dough right out onto the oiled pan and pull the dough out to fit the pan. Using your finger tips, make “dimples” in your dough. Cover and let set 15 minutes.
  • Heat your oven to 500°
  • Spread oil or butter on the top or your dough and sprinkle with garlic salt. Using a knife or spatula, press lines into your dough where you want your breadstick cut lines to be.
  • Bake @ 500° 15 minutes.
  • Decrease your heat to 450° and sprinkle cheese over your breadsticks. I use 1 cup of mozzarella cheese but you can use more and a different kind if you like, they are your breadsticks!
  • Bake another 6 – 10 minutes until cheese is golden brown.
  • Cool 5 minutes before cutting. Cut with a sharp knife or pizza cutter down your lines.
