Roasted Acorn Squash With Maple Sausage

My favorite among fall fare! A beautiful winter squash roasted until golden, a hint of maple and cinnamon and rounded out with delicious sausage! You are gonna love this!

Yields 4 servings

2 Acorn squash (equal size)

1/2 lb Maple sausage

4 Tsp dark brown sugar, rounded

Ground cinnamon

Sea salt

1 Tsp coconut oil

Heat oven to 375 f.

Wash and dry squash. Cur in half crosswise. Cut enough of top and bottom so squash bowls can set even. Clean our seeds. Place a tsp of oil in each bowl and rub all over, spronkle with salt and cinnamon. Place a rounded tsp dark brown sugar into the center of each bowl.

Bake 20 minutes @ 375 degrees f.

Divide sausage up into 4 patties. Pull squash from oven a put a sausage patty into each.

Bake an additional 30 minutes @ 375 degrees f.

Cool 10 minutes before eating.
