Simple Turkey Meatball Soup

Simple, delicious and comfort in a bowl! You can make this low carb by leaving out the pasta.

1 lb Ground turkey

3 Tbsp butter, divided

1 Large egg

1 Tbsp milk

1/4 Cup bread or cracker crumbs

2 Tsp cajun seasoning (or any you like)

6 Cloves garlic, minced, divided

1 Medium onion, diced

3 Medium carrots, grated

4 Stalks celery, sliced

12 Cups chicken broth or water

2 Tbsp powdered chicken bullion if usung water

Salt & pepper to taste

1/2 – 1 Cup dry pasta

1 1/2 Cups fresh spinach

1 1/2 Cup half and half

Heat oven to 350 degrees f.

Make meatballs by mixing turkey, egg, breadcrumbs, 1 Tbsp butter, 1 Tbsp milk, 2 cloves garlic and seasoning. Roll into small, teaspoon sized meatballs. Put in a buttered baking dish and bake @ 350 15 minutes.

Saute onion, celery and 4 garlic cloves in a large pot with 2 Tbsp butter just until softened, about 5 minutes. Add broth and carrots, bring to a boil on high heat, cover, turn to medium – low and simmer 10 minutes. Add pasta and cook through. When pasta is tender, add meatballs, spinach and half and half. Cook ten more minutes.

Serve with parm cheese, crusty bread, salad……..whatever you like!
