Slow Cooker Lemon Bean & Potato Soup

This Lemon Bean and Potato Soup is as delicious as it is budget friendly, small batch and versatile too!

Ingredients and variations

Ingredients: Cannellini beans, red potatoes, white onion, celery, water, Knorr powdered chicken bouillon, fresh thyme, lemon, salt and pepper.

Variations: Navy or Great Northern bean can be used, sausage can also be added (any will work: smoked Italian, Greek, Breakfast), extra veggies can also be added if desired as well as fresh dill, parsley, chives, Add any spices you like! Dumplings can also be added at the end of cooking.

Serving: Serve with a splash of cream, fresh herbs, grated parmesan cheese if desired.

Ingredients

  • 2 pints white beans, drained and rinsed

  • 2 cup potatoes, cubed 1 /2 inch

  • 1 white onion, chopped

  • 1 stalk celery, chopped

  • 3 cloves garlic, minced

  • 1 lemon, zested and juiced

  • 4 cups water or broth

  • 1 tbsp chicken or vegetable bouillon if using water

  • 3 sprigs fresh thyme

  • salt and pepper to taste

  • 1 tbsp butter

Directions

  • Put everything into the slow cooker and set on high for 4 hours.
  • Serve with desired toppings and Enjoy!
