Slow Cooker Pollo Guisado

Slow Cooker Apollo Guisado will make your family think you worked hard on it all day. Chicken simmering in a delicious, flavorful sauce all day served over your favorite rice or mashed potatoes… I can’t say enough good things about this recipe! Make it this week!

Ingredients and Variatiions

Ingredients: chicken breast, onion, tomatoes, jalapeños, garlic, chili powder, tomato paste, onion powder, garlic powder, AP flour, salt, pepper, chicken broth and bay leaf.

Variations: green bell pepper can be used in place of jalapeños. Dark meat chicken can replace white meat. Potatoes and other vegetables can be added to the chicken and sauce to create a full stew!

Serve over potatoes, rice, squash or eat as a stew.

Ingredients

  • chicken
  • 2 Lbs chicken cut into 1 inch cubes

  • 1 small onion, chopped

  • 3 Roma tomatoes, chopped

  • 2 jalapeños, chopped

  • 3 Cloves garlic, minced

  • 1 Tsp salt

  • 2 Tbsp chili powder

  • 2 Tsp onion powder

  • 3 Tbsp oil

  • 1 tbsp tomato padte

  • 2 Cups chicken broth

Directions

  • coat chicken in 1 tsp salt, tbsp chili powder, 1 tsp garlic powder, 1/2 tsp onion powder and 2 tbsp flour. Coat chicken well and set aside to heat oil.
  • heat oil in pan, sear chicken quickly, not cooking all the way through, transfer chicken from pan to slow cooker, leaving oil in pan.
  • to the oil in the pan,Add onions and jalapeños, cook for 2 minutes and add garlic, tomatoes, tomato paste ans seasonings. Cook for a couple minutes and add broth. Pour over chicken in slow cooker.
  • cook on high for 4 hours or low for 6 to 8 hours.
