Sour Cream Pork Chops

This have been my favorite pork chop recipe for years! I made them again two nights ago and forgot to take a picture. But I thought I would post the recipe anyway because they are super delicious!!

You can use your crock pot, Instant Pot or oven for this. Your choice!

Serves 4

4 Thick cut pork chops

2 Cups chicken stock or broth

1 Large onion, sliced thin

1 Cup sour cream

2 Tbsp cornstarch

Salt & pepper to taste

Season your chops any way you like them and put them in your pot or pan, toss in your onions and broth. Set your Instant Pot to pressure cook 30 minutes. Set your crock pot to 8 hour on low or 4 hour on high. Cover and bake @350 in a 9×13 baker for 45 minutes.

When done, pull out the chops and set them aside. Mix sour cream and cornstarch together in a small bowl. Add the sour cream mixture to broth and onions, mix well and add chops back in. For crock pot, cook another 30 minutes, for oven cook another 15 minutes for IP, turn it on saute mode and cook for 5 to 10 minutes until thick.

Add salt and pepper to taste. This sour cream gravy is so good served over mashed potatoes and chops!!
