This is one of my very favorite relish recipes and was given to me many years ago by an Australian lady who was a patient where I worked. This beautiful lady gave me many great recipes and taught me everything I know about jam and jelly making!

Yields 4 half pints
6 Medium tomatoes, peeled, seeded and chopped
2 Medium onions, chopped fine
2 Medium apples, peeled and chopped fine
1 Tsp canning or kosher salt
2 Tbsp curry powder
1 Tsp garam masala
1 Tsp mustard powder
Zest of 1 small lemon
1/4 Cup bottled lemon juice
*1/4 Tsp cayenne pepper (if you want a little kick!)
1/2 Cup white vinegar
1 1/4 Cup light brown sugar
Toss it all in the pot together, cook on medium heat for 30 minutes, stirring frequently. Mixture will thicken slightly.
Fill hot jars leaving 1/2 inch headspace.
Process 15 minutes.
Serve on hot dogs, hamburgers, roasted / grilled meats, sandwiches…. This stuff is good on anything!
