Growing up in Michigan, there were a lot of Amish communities. I did my fair share of eating and shopping in them. This is one of the recipes I picked up along the way. A quick, easy and delicious, one pan meal! If you have these things already on hand in your home canned pantry, even better!
Yields 4 – 6 servings
1 Pint Ground beef (1 lb raw)
1 Qt potatoes (2 – large, diced)
1/2 Pint celery (2 ribs, sliced)
1 Small onion, diced
1/2 Pint carrots (2 carrots, sliced)
1/2 Head cabbage, chopped and cooked in butter
1 Can cream of mushroom soup (or your choice)
Salt and pepper
*shredded cheese to top – optional
Heat oven to 350 degrees f.
In a 9 x 13 baking dish, layer ingredients: Beef, onion, celery, potatoes, carrots, cabbage.
If cooking raw, cover and bake 1 1/2 hour @ 350 degrees f. Uncover, add cheese and bake 15 more minutes.
If cooking from home canned goods, bake @ 350 degrees f, uncovered 45 minutes, add cheese and bake 15 more minutes.
Cool 10 minutes before serving.
