Zucchini Gratin

Do you still have zucchini coming out of your garden and you are out of recipe ideas??Cheesy and delicious single serve zucchini gratins! These can be made ahead and frozen for even quicker side dishes!

Ingredients and Variations

Ingredients: Zucchini, smoked gouda cheese, onions, garlic, dijon mustard, heavy cream, panko bread crumbs, parmesan cheese, olive oil, salt and pepper.

Variations: Yellow summer squash can be used in place of zucchini, use your favorite cheese, leave out the onions and garlic if desired, regular or seasoned bred crumbs can be used instead of panko.

Cheesy single serve zucchini gratins.

Ingredients

  • Filling
  • 4 4 zucchini, small to medium

  • 1 1 small onion, diced

  • 2 cloves 2 garlic, minced

  • 4 oz 4 smoked gouda cheese, shredded

  • 1 tbsp 1 butter

  • 2 tbsp 2 olive oil

  • 2 tbsp 2 heavy cream

  • 1 tsp 1 Dijon mustard

  • salt & pepper to taste

  • Topping
  • 2 tbsp 2 bread crumbs

  • 2 tbsp 2 parmesan, grated

  • 2 tsp 2 olive oil

Directions

  • Heat oven to 350°
  • Cut zucchinis in half length wise. Scrape out the inside leaving the outer skin in tact. Save the insides.
    Brush the zucchinis with olive oil on each side, sprinkle with salt and pepper if desired and bake at 350° for 15 minutes on a parchment lined sheet pan.
  • In a skillet on medium to low heat Caramalize onions in butter, add garlic and zucchini, cook until soft and mixture is dry. Stir in cream, dijon and cheese. Remove from heat.
  • Mix topping ingredients together until all moistened with olive oil.
  • After zucchini skins have baked for 15 minutes, fill them with the filling and sprinkle with topping. Bake for another 15 minutes at 350° or until tops are golden brown and cheese is melted within.
