A delicious appetizer whipped up in a jiffy using your own home canned chicken!
Coconut Chicken Bites

Ingredients
- Chicken Bites
1 qt Canned chicken
3 Large eggs
2/3 cup Mayo
1/4 cup Freeze dried or dried onions
1/4 tsp Cayenne pepper
1/2 tsp Onion powder
1/2 tsp Fresh cracked black pepper
1/2 tsp Salt
1 Lemon, zested and juiced
1/4 cup Almond meal
1/4 cup coconut flour
1 1/2 cup Panko bread crumbs
1 1/2 cup Shredded coconut (sweetened or unsweetened)
2 tbsp EVOO or coconut oil + more for pan
- Tropical Dip
1 cup Sour cream
2 Limes, zested and juiced
1/3 cup Crushed pineapple
1/4 Cup Coconut cream (sweetened or unsweetened)
1 tbsp Honey to sweeten *Optional* (Adjust to your liking)
Directions
- Heat oven to 375°.
- Mix all ingredients for chicken bites together except panko, coconut and oil.
- In a medium bowl, mix panko, coconut and oil together
- Using a small scoop, make 1 1/2 inch balls of the chicken mixture, roll them in the panko and coconut topping and place on an oiled sheet pan.
- Bake @ 375° for 20 minutes in oven or 15 minutes in air fryer, until they are golden brown.

- Just take a whisk and mix it all together!
