Apricot Chicken

This Apricot Chicken is super easy and super delicious!! Great for thighs, legs or breasts. Also pork chops or tenderloin!!It would be great for a Thanksgiving turkey breast as well!!

Ingredients and variations

Ingredients: Chicken thighs, Apricot jam, soy sauce, fresh garlic, ginger paste, sesame oil, coconut oil, salt and pepper.

Variations: Pork chops, tenderloin, chicken breast or legs, bone=in or out can be used. Sugar free jam can be used, amino acids can replace soy sauce, also ground garlic and ginger powder can be used in place of fresh. A tablespoon of brown sugar can be added to sweeten more if desired. Add sriracha sauce if you like a little heat!

Ingredients

  • 6 6 chicken thighs

  • 1/2 pint 1/2 Apricot jam

  • 2 tbsp 2 Soy sauce

  • 2 cloves 2 Garlic, minced

  • 2 tbsp 2 coconut oil

  • 1 tbsp 1 fresh ginger, minced

  • 1 tsp 1 toasted sesame oil

  • salt and pepper

  • 1 tbsp 1 sriracha sauce * optional

Directions

  • Heat oven to 375°
  • Heat an oven safe skillet and add 1 tablespoon coconut oil.
  • Pat chicken dry and season with salt and pepper.
  • Sear chicken on both sides in hot pan with coconut oil.
  • In a smaller pan, heat a tablespoon of coconut oil and cook garlic and ginger for 1 minute. Add jam, sesame oil, soy and sriracha sauce if using. Whisk together and heat until sauce is pourable. Pour over chicken and bake in oven at 375° uncovered for 30 minutes.

  • Serve with rice or noodles. Top with some toasted sesame seeds and fresh green onions.
