Old Fashioned Strawberry Jam Without Pectin

Strawberry jam is the epitome of summer!! A true essential!! Can it or freeze it!

Ingredients and Variations

Ingredients: Strawberries, lemon juice, salt and lemon juice. Thats it!

Variations: Frozen or dried strawberries can be used in place of fresh. Lime juice can be used instead of lemon juice. A sugar substitute suitable for canning can replace granulated sugar, but pectin may then be required. 1/4 cup of fresh herbs can be added as well, such as basil, mint, tarragon, cilantro or Vanilla bean. Put your own spin on strawberry jam!

Canning

Before you begin, be sure to do the safety checks on your canner per manufacturer instructions. Always inspect your jars for chips and cracks and wash all equipment needed for the canning project, in hot soapy water.

Ingredients

  • 5 lbs 5 fresh strawberries, greens removed, cleaned and chopped

  • 6 cups 6 granulated sugar

  • 1/4 cup 1/4 lemon juice

  • 1/4 tsp 1/4 Kosher salt

Directions

  • Inspect jars for cracks and chips. Wash jars, lids and rings in hot, soapy water. Prepare canner filling with water, bring to a simmer with jars in it.
  • Put all ingredients into a large pot, bring to a boil and cook 30 to 45 minutes until desired thickness, don’t forget to check your set!
  • Fill jars leaving 1/4-inch headspace. Remove air bubbles and add more jam if need to keep 1/4-inch headspace. Wipe rims and place on lids and bands to fingertip tight. Place into simmering canner immediately.
  • Process half pints for 10 minutes adjusting by 5 minutes according to your area.
