Aunt Teresa’s Sweet Potato Casserole

These are the absolute BEST sweet potatoes! This dish has beean gracing our Thanksgiving table for many years and will be a welcome addition to yours!

Yields 9 x 4 inch round casserole dish

Custard

29 oz Can of sweet potatoes or yams

1/3 Cup Evaporated milk

2 Large eggs

1 Tsp vanilla extract

3/4 Cup granulated sugar

1/2 Cup butter, room temp

1/4 Tsp salt

Topping

1/2 Cup dark brown sugar

1/2 Cup all purpose flour

1/4 Cup butter, cold, cubed

1/2 Cup chopped pecans

Pinch of salt

Heat oven to 350 degress f.

Grease 9 inch round casserole dish.

Beat together potatoes, milk, sugar, vanilla, eggs, butter and salt until well combined.

Pour into greased dish and set aside.

Make toping by mixing flour, sugar and salt. Cut in butter until coarse crumbles. Add pecans and sprinkle over top of potatoes.

Bake in 350 degree f oven 45 minutes or until center is set.
