This basic muffin mix is so easy to make, handy to have on your shelf and super delicious to boot! You can add blueberries, apples, spices, chocolate chips, cranberries, raspberries, pumpkin, etc… whatever your mood, make a muffin to suit!
Ingredients and variations
Ingredients: all purpose flour, granulated sugar, baking soda, baking powder, salt, butter powder, sour cream powder, vanilla powder, powdered eggs and milk powder.
Variations: gluten free flour can be used, a sugar substitute suitable for baking can replace granulated sugar, buttermilk powder can replace sour cream and milk powder, your favorite spices can be added as well as dried fruit, nuts and chocolate or you can leave the mix as is and add extras as you bake.
Ideas for use: Blueberry muffins – 2 cups of mix+ 1/2 cup water + 1 tbsp lemon powder + 1/2 cup dried blueberries. Lemon Poppyseed muffins 2 cups mix + 1/2 cup water + 2 tbsp lemon powder + 1 tbsp poppyseeds. Pumpkin muffins – 2 cups mix + 1/2 cup water + 1/2 tsp pumpkin pie seasoning. Apple Cinnamon muffins – 2 cups mix + 1/2 cup water + 1/2 cup chopped freeze dried apples + 1 tsp ground cinnamon (& 1/2 cup applesauce powder optional). Orange Cranberry muffins – 2 cups mix + 1/2 cup water + 1/2 cup rehydrated dried cranberries + 1 tbsp orange powder + 1/2 tsp fresh grated nutmeg (1/2 cup white chocolate chips can be added if desired). Banana muffins – 2 cups mix + 1/2 cup water + 1/2 cup banana powder or 1/2 cup fresh smashed banana (add chocolate chips if desired). Chocolate chip muffins – 2 cups mix + 1/2 cup water + 1/2 cup chocolate chips (any kind) ( 1/4 cup cocoa can be added for chocolate chocolate chip muffins). Each of these recipes will make 6 muffins, double if you dare!
