Beef and Potato Casserole

This Beef and Potato Casserole is easy and delicious, it is also very versatile. This casserole can be made using all pantry ingredients. This easy casserole is a base to create something your family will love!

Ingredients and Variations

Ingredients: Potatoes, ground beef, onions, eggs, mild, cheddar cheese, salt and pepper.

Variations: Use the protein of your choice, whatever you have canned up on your shelf, freeze dried, dehydrated or fresh vegetables can be added in, Use the cheese you have on hand fresh or freeze dried, add any herbs and seasoning you like, use fresh or freeze dried eggs and milk.

Ingredients

  • 1 qt 1 potatoes, drained well

  • 1 pt 1 ground beef, undrained

  • 1/2 cup 1/2 onion, chopped or dried

  • 4 cups 4 shredded cheddar cheese, rehydrated if using freeze dried

  • 12 12 eggs, beaten

  • 1 cup 1 whole milk

  • 1 1/2 tsp 1 1/2 Kosher salt

  • 1/2 tsp 1/2 pepper

Directions

  • Heat oven to 350 degrees and butter a 9 x 13 pan.
  • Drain potatoes well and put into the bottom of prepared pan, Sprinkle 1/2 tsp salt over potatoes and 2 cups of cheese, then add the ground beef evenly over cheese and sprinkle onions over beef. Aldo add vegetables of your choice if desired.
  • Whisk eggs (rehydrating per package directions if using freeze dried) and milk together with milk and remaining salt and pepper, pour over beef and potatoes evenly and sprinkle with 2 cups of cheese.
  • Bake at 350° for 30-40 minutes until top is bubbly golden brown and middle is set (no jiggly).
