Buffalo Chicken Tater Tot Casserole

OMG! This is so good! A great spin on boring old tater tot casserole.

Yields 4 servings

1 Pint canned chicken or 1 lb cooked chicken diced or shredded

4 oz Cream cheese

4 Tbsp butter

1/4 to 1/2 Cup hot sauce (I use Franks)

1 Tbsp ranch dip/dressing mix

2 Cups moneray jack cheese, shredded – divided

2 Stalks celery, sliced

2 Green onions, sliced

*1 Carrot, grated (optional)

1/2 Bag tater tots

Heat oven to 375 degrees f.

Butter an 8 x 8 casserole dish. Set aside.

In a mediulm sauce pan, on medium-low heat, drop in butter, cream cheese, ranch, hot sauce and the broth from the chicken. Cook until melted and smooth. Add 1 1/2 cups cheese and stir until melted. Remove from heat.

In casserole dish, layer chicken on bottom, celery, green onions and carrot. Pour sauce over top and sprinkle remailing cheese. Top with tater tots.

Bake @ 375 degrees f 30 minutes, until bubbly and golden brown.

Cool for 10 minutes before serving.
