Chicken Meatball and Orzo Soup

This chicken meatball and orzo soup is scented with lemon and dill, it is as refreshing as it is delicious!

This soup also freezes very well if you can’t finish it all.

Ingredients and Variations

Ingredients: Ground chicken, onions, celery, garlic, garlic powder, onion powder, dried dill, dried parsley, panko, eggs, chicken broth, dried spinach, fresh lemon zest and juice, fresh dill, fresh parsley, fresh oregano, olive oil, orzo pasta, salt and pepper.

Variations: Ground turkey can be used instead of chicken (white or dark meat), all dries or all fresh herbs can be used or a combination of, any herb you like can be used or removed if desired, any small pasta can be used or left out all together for a low carb version.

Serving suggestions: a little swirl of olive oil o the top, extra fresh dell, a sprinkle of feta cheese, garlic croutons, with lemon wedges.

A refreshing chicken soup!

Ingredients

  • 2 lbs ground chicken

  • 3 tsp salt, divided

  • 2 tsp pepper, divided

  • 1 tbsp onion powder + 2 tsps

  • 1 tsp dried parsley

  • 2 tsp dried dill

  • 2 large eggs

  • 1/2 cup panko bread crumbs

  • 12 1/4 cups chicken broth, divided

  • 4 tbsp olive oil

  • 1 large onion, chopped

  • 6 stalks celery, chopped

  • 4 cloves garlic, minced

  • 1/2 cup dried spinach or kale or 1 cup packed and chopped fresh

  • 2 1/2 tbsp fresh dill, chopped

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp fresh oregano, chopped

  • 2 lemons, zested and juiced

  • 1/2 lb orzo pasta

Directions

  • In a large pot, cook onion, celery and garlic in 2 tbsp of oil until translucent.
  • Meatballs: Mix ground chicken with panko, chicken broth, eggs, dried parsley, 2 tsp onion powder, 2 tsp garlic powder, 1 tsp salt, 1 tsp pepper2 tsp dried dill. mix to combine (mixture will be wet!
  • drop small teaspoon sized meatballs onto a baking sheet coated with olive oil. Bake in a 350° oven for 10 minutes to cook the outside and set, Pull out and set aside until needed.
  • Add chicken broth to the onion mixture in the pot, add lemon juice and zest, spinach, a tablespoon of onion powder, 2 teaspoons salt and a teaspoon of pepper. Bring to a boil, cover lower heat and simmer for 10 minutes, then add orzo when orzo is about done add meatballs and fresh herbs.
