Coconut Chicken Bites

A delicious appetizer whipped up in a jiffy using your own home canned chicken!

Ingredients

  • Chicken Bites
  • 1 qt 1 Canned chicken

  • 3 3 Large eggs

  • 2/3 cup 2/3 Mayo

  • 1/4 cup 1/4 Freeze dried or dried onions

  • 1/4 tsp 1/4 Cayenne pepper

  • 1/2 tsp 1/2 Onion powder

  • 1/2 tsp 1/2 Fresh cracked black pepper

  • 1/2 tsp 1/2 Salt

  • 1 1 Lemon, zested and juiced

  • 1/4 cup 1/4 Almond meal

  • 1/4 cup 1/4 coconut flour

  • 1 1/2 cup 1 1/2 Panko bread crumbs

  • 1 1/2 cup 1 1/2 Shredded coconut (sweetened or unsweetened)

  • 2 tbsp 2 EVOO or coconut oil + more for pan

  • Tropical Dip
  • 1 cup 1 Sour cream

  • 2 2 Limes, zested and juiced

  • 1/3 cup 1/3 Crushed pineapple

  • 1/4 Cup 1/4 Coconut cream (sweetened or unsweetened)

  • 1 tbsp 1 Honey to sweeten *Optional* (Adjust to your liking)

Directions

  • Heat oven to 375°.
  • Mix all ingredients for chicken bites together except panko, coconut and oil.
  • In a medium bowl, mix panko, coconut and oil together
  • Using a small scoop, make 1 1/2 inch balls of the chicken mixture, roll them in the panko and coconut topping and place on an oiled sheet pan.
  • Bake @ 375° for 20 minutes in oven or 15 minutes in air fryer, until they are golden brown.
  • Dip
  • Just take a whisk and mix it all together!
