Curtido

Curtido is Mexican style slaw and is delicious with just about anything! This slaw is vinegar based instead of mayo and has a little kick with the addition of jalapeƱo.

Tangy slaw with a little kick!

Ingredients

  • 1 small head of cabbage or half a medium head

  • 1 small red onion

  • 2 jalapeƱos

  • 2 tsp mexican oregano

  • 2 – 3 tsp salt

  • 1/2 cup white vinegar

  • 1/2 cup water

Directions

  • Slice cabbage very thin. Slice red onion very thin in half moons. Cut tops of jalapeƱo, cut in half, remove seeds and membranes and cut into thin slices.
  • Bring a large pot of water to a boil. Add sliced vegetables, turn off heat and cover. Let sit 15 minutes.
  • After 15 minutes, drain vegetables. In a large bowl, add drained vegetables and the rest of the ingredients, mix well and refrigerate for 2 hours before serving.
