Dutch Baby For One

1/4 cup Flour
1/8 tsp Salt
1 tbsp Granulated sugar
1/2 cup Whole milk or half and half
1 Egg
A splash of vanilla extract
2 tbsp Butter plus extra for serving
1/2 Lemon
1 tbsp Powdered sugar for serving
Directions
- In a blender, add flour, salt, sugar, egg, vanilla and milk and blend until smooth (30 seconds). Set aside for 15 to 20 minutes to thicken slightly.
- Heat oven to 425° and put an oven safe, 9 inch skillet on the middle rack to heat up with oven.
- Pull pan out of oven, add butter and swirl around until pan is coated well. Pour batter in and immediately put back into oven for 15 minutes until puffy and slightly golden.
- Sprinkle with powdered sugar, squeeze fresh lemon juice over the top and a pat of butter. Enjoy!
