Whether you are celebrating Cinco de Mayo, Taco Tuesday or dinner, this is a quick, easy and delicious way to celebrate!
3 – 4 lbs Pork butt, cut into 2 inch chunks
1 Cup water
1 Orange, cut in half and juiced
6 Ounces evaporated milk
1 bay leaf
1/4 Tsp ground cumin
1 Tsp Mexican oregano
3 Garlic cloves, minced
1 Medium onion, sliced
Salt & pepper
2 Jalapenos cut in half, seeds removed (or leave em in, how hot do you want it?? Add more jalapenos if you like)
Everyone in the hot tub! Including the orange juice and the orange peels, just drop em in!
Set your IP to pressure cook for 30 minutes.
Pull out the meat and shred it like you mean it! You can put it under the broiler to crisp it up.
Top your tacos or burritos any way you like. I like sliced radish, pickled onions, queso fresco & salsa verde!
