Empanada Dough

Here in the southwest, we love our empanadas! This is my “Go To” dough recipe for any kind of empanada. I like to make a bunch for the freezer to have on hand and I make a variety of sweet and savory. It’s nice to have them ready to toss them in the air fryer when I want!

Fill these with any filling you like!

Ingredients

  • 3 cups All purpose flour

  • 1/2 tsp Salt

  • 1/2 cup Unsalted butter, cold and cubed

  • 1 Large egg

  • 3/4 cup Cold water

Directions

  • In a food processor (or by hand) mix flour and salt. Add butter and pulse until it has a crumbly texture, add in egg and water, pulse just until dough comes together.
  • Wrap dough disc in wax paper or plastic wrap. Refrigerate 1 hour.
  • On a floured surface, roll dough out to 1/4 inch thickness. Using a 4 inch biscuit cutter , cut out circles, add a spoon full of filling, wet edges of dough with water, fold dough over the filling crating a half moon and pinch dough edges together. Laying the empanada flat, use a fork to crimp edges and pierce tops for venting.
  • Air fryer at 425° for 14 minutes, turning once at 7 minutes.
    Conventional oven 400° for 20 – 25 minutes, turning once halfway in between.
    Frying: Put at least a half inch of oil, such as vegetable or peanut into a skillet on medium – high heat. Bubbles will form around a wooden spoon handle when oil is ready. Fry empanadas for 2 – 3 minutes each side. Drain on paper towels or cooling rack.

    Is there any special preparation to freeze the empanada’s before you cook them? I want to make a few hundred beef, chicken and pork before our busy season. How well do they store? I know you did this in the air fryer but will they also be ok in a regular fryer? Or should I bake in a high temp convection oven? Would like your opinion.

    • Just freeze them on a cookie sheet in a single layer, then keep them in a freezer bag. You can pop them right into the air fryer from frozen!
