German Gingerbread Cookies (Lebkuchen)

These gingerbread cookies are soft and cakey, spicy and delicious. These are also, the easiest gingerbread cookies you will ever make!

Ingredients and Variations

Ingredients: All purpose flour, ground cinnamon, ground clove, ground ginger, ground cardamom, ground all spice, salt, butter, molasses, corn syrup, eggs, orange zest and almond extract.

Variations: Toasted chopped nuts can be added and candied citrus, 2 tbsp of cocoa powder can also be added as well as 2 tbsp of rum or orange liqeuer. Almond extract can be switched out for vanilla or orange.

Decoration: Traditionally candied citrus or nuts are used to decorate the tops but cookie sprinkles can be used also.

Ingredients

  • Cookies
  • 3/4 cup butter, softened

  • 1 1/3 cup brown sugar, packed

  • 2 large eggs

  • 2 tbsp molasses

  • 1/3 cup light corn syrup

  • 1 tsp almond extract

  • 2 3/4 cups all purpose flour

  • 1 tsp baking powder

  • 1 1/2 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/8 tsp ground clove

  • 1/4 tsp ground all spice

  • 1/4 tsp ground cardamom

  • zest of 1 orange

  • Chocolate Glaze
  • 1 cup Semi sweet chocolate chips or chopped chocolate

  • 1 tbsp coconut oil

  • Sugar Glaze
  • 1 cup powdered sugar

  • juice of 1 orange

  • 2 tsp milk

  • Decoration
  • toasted nuts

  • candied citrus

  • cookie sprinkles

Directions

  • Heat oven to 350°.
  • Cream butter and sugar. Add eggs and extract. In a separate bowl whisk dry ingredients together. Add dry ingredients to the wet ingredients and mix until combined.
  • Drop tablespoon sized dough onto a lined cookie sheet 2 inches apart.
  • Bake at 350° for 10-12 minutes until set and golden. Cool on wire rack completely.
  • Chocolate glaze: melt chocolate and coconut oil in 1 minute intervals in microwave and stir until smooth.
  • Sugar Glaze: Whisk powdered sugar with orange juice and milk until smooth.
  • Dip cookie tops in glazes and decorate. Let cookies dry before serving.
