Lentil & Tomato Soup

Made completely with shelf stable ingredients, this soup is as easy to make as it is delicious! Change up the spices and vegetables and make it yours!

Ingredients and Variations

Ingredients: lentils, canned tomatoes, tomato paste olive oil, water, chicken bouillon, carrots, onions, garlic powder, onion powder, paprika, salt and pepper.

Variations: use the lentils you have on hand, tomato sauce can be used instead of tomato paste. Spinach, kale or cabbage can be added as well as mushrooms. beef or veggie bouillon or broth can be used instead of chicken. Use the seasonings you like! Italian seasoning will give this great flavor. Add some smoked sausage if you like or ground beef to make it even more hearty.

Ingredients

  • 2 tbsp 2 olive oil

  • 1/4 cup 1/4 tomato paste

  • 1 14.5oz can 1 diced tomatoes

  • 10 cups 10 water or broth

  • 1 tbsp 1 powdered chicken bouillon if using water

  • 1/4 cup 1/4 dried minced onion

  • 1 pint 1 canned carrots or 1/4 c dried

  • 1 1/2 tsp 1 1/2 onion powder

  • 1 tsp 1 garlic powder

  • 1 tsp 1 paprika

  • 1/2 tsp 1/2 celery powder or celery salt

  • 1/2 tsp 1/2 fresh ground black pepper

  • salt to taste

  • 1 cup 1 dry lentils, sorted and rinsed

Directions

  • in large soup pot, toast tomato paste in olive oil for 2 minutes, then add the rest of the ingredients. Bring soup to a boil, cover and lower heat to a simmer and simmer 20 minutes.
