Homemade Hot Pockets – Freezer Friendly

These homemade hot pocket are so easy and customizable, you will never buy them again!

These hot pockets are delicious! Make them exactly how you want them! and these store beautifully in the freezer, when you need a quick lunch or dinner, ready when you are. Make up a bunch for your freezer to day!

Ingredients and Variations

Ingredients: All purpose flour, yeast, granulated sugar, water, olive oil, Dry malt powder.

Variations: Whole wheat, bread flour or gluten free can be used instead. Use the oil of your choice. Herbs can be added to the dough as well.

Fillings: Pizza toppings, sauce, meat cheeses.

Filling Ideas: Supreme pizza, White pizza, Reuben – corned beef, mustard, swiss cheese and sauerkraut.

Ham and cheese – chopped or deli ham, cheddar, swiss or American cheese, brown or spicy mustard. ( great use for leftover holiday ham)

Meatball – meatballs, sauce, parmesan or mozzarella cheese

Italian sausage – Italian sausage, pickled banana peppers, sautéed bell peppers and onions, provolone cheese.

Chili dog – Hot dogs, hot dog chili, cheddar or American cheese, chopped onions.

Breakfast – scrambled egg, bacon, sausage, onions, mushrooms, bell peppers, cheese.

Cuban – Deli ham, Pulled pork, pickles, swiss cheese and mustard.

Sloppy joe – Sloppy joe meat, cheese ( pickles and onions)

Potato, cheese and onion – sautéed onions, mashed potatoes, cheese

Chicken broccoli – steamed broccoli, cooked chicken, cheddar cheese

Turkey – cooked turkey, Havarti cheese, garlic sauce.

Thanksgiving – cooked turkey, Havarti cheese, cranberry sauce, (stuffing and potato)

Beef and cheddar – Sliced beef, Cheez Whiz or Provolone

Italian Beef- Sliced beef, Sauteed onions and bell peppers, Provolone or Cheez Whiz.

Ingredients

  • 1 1/3 cups 1 1/3 Warm water

  • 1 pkg 1 Intant yeast 2 1/4 tsp

  • 1 tbsp 1 granulated sugar

  • 2 tbsp 2 olive oil

  • 11/2 tsp 11/2 salt

  • 1 tbsp 1 Dry malt powder

  • 3 cups 3 all purpose flour

  • Filling of our choice
  • meat

  • cheese

  • sauce

  • vegetables

  • pickles

  • Egg Wash
  • 1 1 Large egg

  • 1 tbap 1 water

Directions

  • In large mixing bowl, mix water with yeast and sugar. Let sit 10 minutes.
  • Combine flour, salt, oil and malt powder to yeast mixture After dough forms, knead for 5 minutes.
  • Cover and let rise 1 1/2 hours in warm place. (Oven with the light on)
  • Dump dough out onto counter, cut into 8 pieces. Roll each out into an oval, put filling of your choice (see list above) on half and fold dough over filling, Twist up edges to seal completely. Put on to a parchment lined baking sheet.
  • Heat oven to 400°.
  • Whisk egg wash together and brush pockets with it. Sprinkle topes with sea salt, parm cheese, everything bagel seasoning or sesame seeds if desired. Using a serrated knife, cut 3 slits in each, to vent.
  • Bake at 400° for 20 to 25 minutes until golden brown. Allow to cool slightly before eating.
  • Allow to cool completely before freezing. Freeze on a parchment lined cookie sheet then transfer to a freezer bag. Store in freezer for up to 3 months. Heat from frozen stage for 15 minutes in air fryer, oven or microwave for 5 minutes on high.
