Immune Boosting Chicken Soup

2 tbsp Butter
1 Onion, diced
3 stalks Celery, chopped
4 Carrots, sliced
8 cloves Garlic, minced
5 sprigs Thyme
1 1/2 – 3 tsp Fresh sage, chopped
1 1/2 – 3 tsp Fresh rosemary, chopped
1 tbsp Fresh dill, chopped
1 tbsp Fresh parsley, chopped
1 tbsp Ground turmeric
2 Lemons, juice and zest
1 qt Chicken
16 cup Chicken bone broth
3 Large eggs. beaten with 1/4 cup water
Salt and pepper to taste
Directions
- In a large pot, cook onions, celery, carrots and garlic in butter 5 minutes. Put in broth, sage, thyme, turmeric, rosemary, chicken and salt and pepper. Bring to a boil, cover turn heat down to simmer for 45 minutes.
- Then add lemon, zest, juice, eggs and parsley and dill. Salt and pepper to taste.
- Cook up noodles or rice on the side to serve your soup over if you like or with a side of fresh bread!
