Irish Casserole

Ingredients
1 1/4 lb Lean ground beef
1/2 Head Cabbage, chopped
1 Medium Onion, chopped
4 Tbsp Butter, divided
3 Cloves Garlic, minced
1 Bay leaf
1 tsp Onion powder
1/2 tsp Garlic powder
1/2 tsp Salt
1/2 tsp Pepper
1 Bottle (11.2oz) Guinness Extra Stout
2 Cups Beef stock or broth
1/4 Cup Peas
1/4 Cup Carrots, diced small
1 Tbsp Cornstarch
2 Tbsp Water
4 Large Potatoes, baked and cooled
7 oz Dubliner cheese (Kerry Gold), grated
1/2 Cup Heavy cream
Directions
- In an 11 inch iron skillet (or one that can transfer to oven), brown beef, onion and cabbage in 2 tablespoons of butter.
- Heat oven to 375 degrees.
- To beef, add beer, stock, bay leaf, onion powder, garlic powder, peas, carrots, salt & pepper. Bring to a boil, cover, turn heat to low and simmer 30 minutes.
- Mix cornstarch and water making a slurry and stir into beef. Turn of heat.
- Peel and slice potatoes into 1/2 inch slices, lay potato slices on top of beef, sprinkle with more salt and pepper, dot with remaining 2 tablespoons of butter, sprinkle cheese over butter and potatoes and top it all off by drizzling the cream over the top.
- Bake @ 375 degrees 35 – 40 minutes until golden brown on top.
