Creamy casserole deliciousness!!

Ingredients

  • 1 1/4 lb Lean ground beef

  • 1/2 Head Cabbage, chopped

  • 1 Medium Onion, chopped

  • 4 Tbsp Butter, divided

  • 3 Cloves Garlic, minced

  • 1 Bay leaf

  • 1 tsp Onion powder

  • 1/2 tsp Garlic powder

  • 1/2 tsp Salt

  • 1/2 tsp Pepper

  • 1 Bottle (11.2oz) Guinness Extra Stout

  • 2 Cups Beef stock or broth

  • 1/4 Cup Peas

  • 1/4 Cup Carrots, diced small

  • 1 Tbsp Cornstarch

  • 2 Tbsp Water

  • 4 Large Potatoes, baked and cooled

  • 7 oz Dubliner cheese (Kerry Gold), grated

  • 1/2 Cup Heavy cream

Directions

  • In an 11 inch iron skillet (or one that can transfer to oven), brown beef, onion and cabbage in 2 tablespoons of butter.
  • Heat oven to 375 degrees.
  • To beef, add beer, stock, bay leaf, onion powder, garlic powder, peas, carrots, salt & pepper. Bring to a boil, cover, turn heat to low and simmer 30 minutes.
  • Mix cornstarch and water making a slurry and stir into beef. Turn of heat.
  • Peel and slice potatoes into 1/2 inch slices, lay potato slices on top of beef, sprinkle with more salt and pepper, dot with remaining 2 tablespoons of butter, sprinkle cheese over butter and potatoes and top it all off by drizzling the cream over the top.
  • Bake @ 375 degrees 35 – 40 minutes until golden brown on top.
