Kale Chicken Caesar Pasta Salad

Caesar Salad with a little more body and could be a main dish! This Kale Chicken Caesar Salad has it all, protein, veg, carb and tons of flavor! Perfect for a summer supper.

Ingredients and Variations

Ingredients: pasta, kale, red onions, garlic, chicken breast, lemon pepper, grape tomatoes, parmesan cheese, garlic, lemon juice and Caeser vinegarette ( I use Newmans Own). Extra virgin olive oil, salt and pepper.

Variations: any cut of chicken can be used, also leftover rotisserie chicken, tomatoes can be left out if desired, use your favorite Caesar dressing or make it from scratch.

Chicken Ceasar salad with body and flavor!

Ingredients

  • 1 lb 1 Pasta, cooked as directed

  • 2 cups 2 kale, chopped

  • 2 tbsp 2 red onion, minced

  • 4 cloves 4 garlic, minced

  • 1/2 cup 1/2 Caesar vinegarette

  • 1/2 cup 1/2 E=extra virgin olive oil + 1 tbsp

  • juice of 1 lemon

  • 2 cups 2 chicken, cooked and diced

  • 1 cup 1 grape tomatoes

Directions

  • Cook pasta according to package directions, drain and set aside to cool.
  • If using chicken breast raw, season with lemon pepper and salt, cook in a tablespoon of olive oil over medium heat until just cooked through. Set on a plate to cool.
  • In the same pan add onion, 2 cloves of garlic and kale, add more olive oil if needed. cook kale until soft. Set aside to cool.
  • In a large bowl, combine pasta, chicken, kale, dressing, 1/2 cup olive oil, 2 cloves of minced garlic and the juice of 1 lemon, toss to coat all and add tomatoes, toss to coat and lastly, add cheese grated or strips using a vegetable peeler.
  • Refrigerate for 2 hours before serving.
