Molasses Brown Bread

Yields 2 loaves

Ingredients

  • 2 1/2 cups Warm water

  • 1 1/2 tbsp Instant yeast

  • 1 tsp Brown sugar

  • 3 cups Wheat flour

  • 3 – 4 cups Bread flour

  • 1/3 cup Honey

  • 1/3 cup Molasses

  • 2 tsp Salt

  • 1 tsp Instant espresso powder

  • 2 tbsp Cocoa

  • 3 tbsp Coconut oil, or other light oil

  • 1/2 cup Rolled oats

Directions

  • Sprinkle warm water with instant yeast and sugar. Let sit 10 minutes.
  • In a mixing bowl, add all ingredients except oats. Using a dough hook, mix into a dough adding more bread flour as needed, 1/4 cup at a time, up to 4 cups. Knead 7 minutes.
  • Put dough ball into a large oiled bowl, cover with a damp towel an set in a warm place 1 1/2 to 2 hours, until doubled in size. (I keep mine in the oven with a light on)
  • After it has risen, dump dough onto clean counter and divide in half. Pat each into a rectangle, roll up, tuck in ends and place each into greased loaf pans.
  • Brush tops with water, sprinkle each with 1/4 cup oats. Let rise again 30 – 45 minutes, until it has risen above pan edge by 1 inch only.
  • Bake @ 350° 30 minutes.
  • Turn out onto cooling rack immediately after done baking. Cool before cutting.
