This is the best sandwich bread! Smoked turkey and tomato please!
Molasses Brown Bread

Ingredients
2 1/2 cups Warm water
1 1/2 tbsp Instant yeast
1 tsp Brown sugar
3 cups Wheat flour
3 – 4 cups Bread flour
1/3 cup Honey
1/3 cup Molasses
2 tsp Salt
1 tsp Instant espresso powder
2 tbsp Cocoa
3 tbsp Coconut oil, or other light oil
1/2 cup Rolled oats
Directions
- Sprinkle warm water with instant yeast and sugar. Let sit 10 minutes.
- In a mixing bowl, add all ingredients except oats. Using a dough hook, mix into a dough adding more bread flour as needed, 1/4 cup at a time, up to 4 cups. Knead 7 minutes.
- Put dough ball into a large oiled bowl, cover with a damp towel an set in a warm place 1 1/2 to 2 hours, until doubled in size. (I keep mine in the oven with a light on)
- After it has risen, dump dough onto clean counter and divide in half. Pat each into a rectangle, roll up, tuck in ends and place each into greased loaf pans.
- Brush tops with water, sprinkle each with 1/4 cup oats. Let rise again 30 – 45 minutes, until it has risen above pan edge by 1 inch only.
- Bake @ 350° 30 minutes.
- Turn out onto cooling rack immediately after done baking. Cool before cutting.
This recipe is as good as the bread I remember a family friend making when I was a child; and the search has been long and illusive. Thank you for restoring a gift from my childhood.
