Nutcracker Cookie Bars

Nutcracker Cookie bars are a quick and easy way to make peanut butter cookies! These Nutcracker Cookie Bars are soft and deeply peanut butter!! Make some for the peanut butter lover in your life!

Ingredients and Variations

Ingredients: Cookie – Butter, creamy peanut butter, brown sugar, eggs, salt, vanilla extract, flour and baking powder.

Frosting – butter, creamy peanut butter, confectioners sugar, vanilla extract and milk. chocolate chips

Variations: crunchy peanut butter, use butter flavor shortening instead of butter for a lighter, fluffier cookie. Add in some peanut butter chips if you like and extra chopped nuts.

Deeply Peanut butter bars

Ingredients

  • Cookie Base
  • 1/2 cup 1/2 butter, softened

  • 2/3 cup 2/3 creamy peanut butter

  • 1 1/2 cups 1 1/2 brown sugar (light or dark)

  • 2 2 large eggs

  • 1 1/2 cups 1 1/2 all purpose flour

  • 1 1/2 tsp 1 1/2 baking powder

  • 1 1/2 tsp 1 1/2 vanilla extract

  • Frosting
  • 1/4 cup 1/4 butter

  • 1/2 cup 1/2 creamy peanut butter

  • 1 tsp 1 Vanilla extract

  • 4 cups 4 confectioners sugar

  • Topping
  • 1/2 cup 1/2 chocolate chips, melted

  • 2 tbsp 2 cookie sprinkles

Directions

  • Heat oven to 350°.
  • Cream sugar, butter and peanut butter together until fluffy, Add eggs one t a time until incorporated. Add flour and baking powder, mix just until combined.
  • Spread evenly into a nonstick 9 x 13 (for thicker cookies) or 15 x 10 jelly roll pan (for thinner cookies), use parchment paper if using a non stick pan.
  • Bake at 350° for 18 – 20 minutes in jelly roll pan or 20-25 minutes for a 9 x 13.
  • Frosting: Whisk all ingredients together and whip until light and fluffy.
  • Cool cookie bars completely before frosting. Drizzle melted chocolate over frosted bars and sprinkle with cookie sprinkles if desired. cut into squares to serve.
