Old Fashioned Back Yard Ham and Cheese Pasta Salad

I remember eating this at church potlucks in Michigan! I love this pasta salad and make it every summer. You can change it up in many ways.

1 lb Ditalini pasta, cooked and rinsed

1 Small onion, chopped fine

1/2 Red bell pepper, chopped fine

8 oz Colby jack or american, diced 1/4 inch cubes

3 Green onions, sliced

1/2 Cup frozen peas

1 Cup ham, diced small

1 Cup mayo

1/4 Cup canola oil

3 Tbsp lemon juice

1 Tbsp white vinegar

1/4 Cup milk

1 Tsp sugar

Salt & pepper to taste

Mix it all up and refrigerate 2 hours before serving.

This recipe works well with spam and velveeta or use smoked turkey and havarti, gouda, munster……. I’ve made it a lot of different ways!
