A great meal starter pressure canning recipe! The pork is tender and flavorful!

Ingredients
8 lbs Pork shoulder, cut into 1 1/2 inch cubes
Salt & pepper
17 cups Chicken or pork broth
1 cup Soy sauce
14 cloves Garlic, minced
1 tbsp Ground ginger or 2 tbsp fresh grated
2 – 4 tbsp Sriracha sauce
1/2 head Cabbage, sliced thin
1 Large onion, chopped
3 Large carrots, grated
Directions
- Wash jars in hot, soapy water and prepare pressure canner with water, per canner instructions.
- Heat oven to 425°. Sprinkle salt and pepper over meat and spread out onto baking sheet pans in a single layer. Roast in oven for 30 minutes, stirring half way in between.
- Bring pressure canner to a low simmer.
- Mix cabbage, carrots and onions in a large bowl, set aside until ready to fill jars.
- Prepare broth by adding broth, soy sauce, garlic and ginger to a large pot. Bring to a boil, cover. lower heat and simmer 10 minutes or until ready to can.
- Divide hot meat in to jars, add cabbage mixture until jars are 3/4 full, pour in broth leaving 1 inch headspace. De=bubble, adding more both to make 1 inch headspace if needed. Wipe rims, add lids and rings to fingertip tight. Put jars into simmering pressure canner.
- Process quarts 90 minutes and pints 75 minutes.
