Pork Egg Roll In A Bowl ~ Pressure Canning Recipe

Ingredients

  • 8 lbs 8 Pork shoulder, cut into 1 1/2 inch cubes

  • Salt & pepper

  • 17 cups 17 Chicken or pork broth

  • 1 cup 1 Soy sauce

  • 14 cloves 14 Garlic, minced

  • 1 tbsp 1 Ground ginger or 2 tbsp fresh grated

  • 2 – 4 tbsp 2 – 4 Sriracha sauce

  • 1/2 head 1/2 Cabbage, sliced thin

  • 1 1 Large onion, chopped

  • 3 3 Large carrots, grated

Directions

  • Wash jars in hot, soapy water and prepare pressure canner with water, per canner instructions.
  • Heat oven to 425°. Sprinkle salt and pepper over meat and spread out onto baking sheet pans in a single layer. Roast in oven for 30 minutes, stirring half way in between.
  • Bring pressure canner to a low simmer.
  • Mix cabbage, carrots and onions in a large bowl, set aside until ready to fill jars.
  • Prepare broth by adding broth, soy sauce, garlic and ginger to a large pot. Bring to a boil, cover. lower heat and simmer 10 minutes or until ready to can.
  • Divide hot meat in to jars, add cabbage mixture until jars are 3/4 full, pour in broth leaving 1 inch headspace. De=bubble, adding more both to make 1 inch headspace if needed. Wipe rims, add lids and rings to fingertip tight. Put jars into simmering pressure canner.
  • Process quarts 90 minutes and pints 75 minutes.
