These are versatile and can be filled with your cheese, beans, meat… anything you like! Top them off with curtido, crema, salsa, hot sauce, avocado… the possibilities are endless!
Pupusas

Ingredients
3 cups masa, I use Maseca brand
2 tsp salt
2 3/4 – 3 cups warm water
1 1/2 cup filling: shredded meat, refried beans, cooked veg
1 cup shredded cheese *optional
oil for frying
Directions
- Mix together to form a dough. Make sure its not too dry.
- Oil your hands slightly and pinch off a 1/4 cup sized piece, flatten into a disc, slightly thinner in the middle. Place a few tablespoons of filling and cheese in the middle and cupping your hand, bring side up into a purse, pinch of excess amount and add back into the bowl. Flatten into a disc carefully, fix any cracks.
- Brush griddle with a little oil and fry pupusas for 3 – 4 minutes each side until golden. They will puff slightly in the middle when done.

These are so good! My filling skills need a little practice, but it didn’t matter in the end because they turned out just fine. My family was requesting I make these again two days later, so I did!
