Runza or Runsas

Either way you spell it, this Nebraskan retro fast food is still a hit in my book! These German beef and cabbage buns with onions, cheese and seasonings are like a loose meat cheeseburger with cabbage and an uber delicious bun!

Yields 8 buns

Dough

3/4 Cup warm water

1/2 Cup oil

1/2 Cup sweetened condensed milk

2 Tbsp granulated sugar

1 Large egg, room temp

2 Pkgs instant yeast (or 4 1/2 tsp)

3 1/2 Cups all purpose flour

1 Tsp salt

Whisk together water, oil, sweetened condensed milk, sugar and yeast. Let it set for 5 minutes and whisk in egg. Set aside.

In your large mixing bowl add flour and salt. Stir in wet ingredients until well combined and knead for 5 minutes.

Put dough in a well oiled bowl, cover and let it proof in a warm area for 1 – 11/2 hours, until doubled in size.

Filling

1 Tbsp oil

1 Large onion, chopped

1/2 Small head of cabbage, sliced

1 1/2 lbs Lean ground beef

1 Tsp garlic powder

1 Tsp onion powder

A few shakes of worcestershire

Salt & pepper to taste

8 American cheese slices

Add oil to pan and drop in your onions, cabbage and beef. Cook until done (drain fat off you you have excess) and add seasonings.

Let filling cool 20 minutes or so.

Assembly

Set your oven to 350 degrees f.

Divide dough into 8 pieces. Roll each into a ball. Using a rolling pin, roll each out into a circle a little larger than your hand and drape the dough round in a bowl so the edges hang over slightly. This makes it easier to fill the bun. Add 3/4 cup filling to each bun, pull the dough edges up around the filling and twist the edges to bring it together and seal it.

Lay seam side down on a sheet pan with parchment paper. Pierce each bun with a fork for venting.

Cover them and let then rise 20 minutes.

Bake them in a 350 degree f oven for 20 minutes until golden brown.

Butter the tops when you pull them out of the oven.
