Salted Caramel Brownie Cookies

These salted caramel brownie cookies are super delicious and versatile.

Ingredients and Variations

Ingredients: Semi sweet chocolate, dark chocolate chips, butter, sugar, all purpose flour, brown sugar, eggs, vanilla extract, salt and caramel.

Variations: Gluten free flour can be used instead of all purpose, a sugar substitute suitable for baking, Instead of caramels, a candy of your choice can be used or a jam or jelly for the filling. Coffee extract can replace vanilla. Espresso powder can be added for more intense chocolate flavor. Any chocolate chip can be used, dark, milk or white. Add in some nuts or dried fruit!

Decorate with sprinkles of the season!

Ingredients

  • 1/4 cup 1/4 butter

  • 2/3 cup 2/3 all purpose flour

  • 2 tbsp 2 unsweetened cocoa

  • 1qtsp 1qtsp baking powder

  • 2 2 large eggs

  • 8 oz 8 semi sweet chocolate, chopped

  • 1/2 cup 1/2 granulated sugar

  • 1/2 cup 1/2 brown sugar

  • 1 tsp 1 vanilla extract

  • 1 tsp 1 espresso powder

  • 1/2 cup 1/2 chocolate chips

  • 8 8 square caramels cut in half

  • 1 tsp 1 flakey sea salt

Directions

  • Preheat oven to 350 degrees.
  • melt 8 oz of chocolate in the microwave in 30 second intervals. Stir and set aside to cool slightly.
  • Cream butter and sugar, add eggs and vanilla.
  • Whisk dry ingredients together.
  • Carefully stir dry ingredients into wet without over mixing. And add mix-ins.
  • On a parchment lined cookie sheet dollop 2 tablespoons each leaving room to spread, add a caramel half and put 1 more tablespoon on top of the caramel. Sprinkle tops with a pinch of flaked sea salt and sprinkles if you like.
  • Bake at 350° for 12 – 15 minutes.
  • Cool on wire rack completely before eating.
