Skillet Lemon Cream Chicken Thighs

This one skillet creamy lemon chicken thigh dinner is so good, it will stay in your weekly dinner rotation! This chicken is sophisticated enough for a dinner party!

Ingredients and Variations

Ingredients: Chicken thighs, butter, shallot, garlic, dry white wine, chicken broth, Dijon mustard, lemon, fresh parsley, salt and pepper.

Variations: Chicken breast can be used bone in or boneless, pork tenderloin can be used as well. Onion instead of a shallot, you can leave out the wine and use all chicken stock if you desire. Dry parsley can be substituted for fresh if needed.

Ingredients

  • 6 chicken thighs

  • 2 tbsp butter

  • 1 shallot, chopped

  • 6 cloves garlic, minced

  • salt and pepper

  • 1 cup dry white wine

  • 2 cups chicken broth or stock

  • 1 lemon, zest and juice

  • 1 tsp Dijon mustard

  • 1/4 cup heavy cream

  • 1 tbsp fresh parsley, minced

Directions

  • Dry chicken thighs with a paper towel. sprinkle a little salt and pepper on chicken. Melt butter in skillet on medium-high and place chicken in skillet, searing both sides (2 minutes per side), remove chicken.
  • Put shallot and garlic in skillet, turn heat down to s medium-low, cook for a couple minutes and whisk in wine, broth and mustard. Place chicken back in, cover and cook on a medium-low for 25 minutes, turning chicken halfway through. When done, add in the cream and fresh parsley.
  • Serve over pasta o, mashed potatoes or creamy polenta!
