Spanish Rice

An easy and delicious side dish for any meal! This rice has delicious flavor, you will never buy the pre-packaged Spanish rice again!

Ingredients and Variations.

Ingrdients: Rice, tomato, onion, filtered water, tomato bouillon, oil, garlic powder, onion powder and salt.

Variations: I use Jasmine rice but any rice can be used here, chicken broth can be used in place of water anf 2 tablespoons of tomato sauce can be used in place of tomato bouillon. Use the seasonings you like. Use a light oil with a high smoke point for toasting rice and onion.

Serving suggestions

Top with some sliced green onions and cotija cheese! Serve with tacos, burritos, chicken, beans, enchiladas, tostadas, any grilled meat! Use to stuff cabbage or green peppers.

Rice full of flavor!

Ingredients

  • 1 tbsp 1 oil

  • 2 tbsp 2 onion, minced

  • 1 1 Roma / Plum tomato, Seeded and diced

  • 1 cup 1 rice

  • 2 cups 2 filtered waer

  • 1 tsp 1 tomato bouillon powder

  • 1/2 tp 1/2 onion powder

  • 1/2 tsp 1/2 garlic powder

  • 1/2 tsp 1/2 salt (or more if desired)

Directions

  • heat oil in pot on medium, add onion and cook for a few minutes, then add rice. Toast rice until light brown, being careful not to burn it. Add tomato, water and sesaoning, bring to a boil, cover, lower heat and simmer for 20 minutes without lifting lid!
  • Fluff with a fork when done.
