BBQ Chicken Chili

A new twist on chicken chili, a little smoky a little spicy and delicious! This chili is ready in 15 minutes!

Ingredients and Variations

Ingredients: Home canned chicken breast, cannellini beans, onion, chicken broth, bbq sauce, tomato paste, liquid smoke, garlic powder, onion powder, cayenne pepper, ground cumin, chili powder salt and pepper.

Variations: Pork or beef can be switched out for the chicken , use commercially canned if you don’t have home canned. Use your favorite BBQ sauce and liquid smoke, Use the seasonings of your choice!

Ingredients

  • 1 1 large onion, diced

  • 1 qt 1 chicken, canned or leftover

  • 2 TBSP 2 oil or butter

  • 2 tbsp 2 tomato paste

  • 12 cups 12 chicken broth

  • 1/4-1/2 cup 1/4-1/2 bbq sauce (How much do you like it?)

  • 2 pints 2 beans

  • 1 can 1 Rotel

  • 2 tsp 2 ground cumin

  • 1 tbsp 1 chili powder

  • 1 tbsp 1 onion powder

  • 2 tsp 2 garlic powder

  • 1 tsp 1 granulated sugar

  • 1 tsp 1 salt

  • 1/2 tsp 1/2 black pepper

  • 1/4-1/2 tsp 1/4-1/2 cayenne pepper (how hot do you want it?)

  • 2 dashes 2 liquid smoke

Directions

  • In a large pot over medium heat, cook onion in oil 3 minutes, then add tomato paste, cook 2 more minutes and add broth, beans, chicken, Rotel . bbq sauce and seasonings. Bring to a boil, cover lower heat and simmer for 10 minutes.
  • Thicken with cornstarch slurry if desired.
  • Serve with shredded cheese, sour cream, chopped onions jalapenos or any other desire toppings.
