Spinach & Feta Chicken Sausage

So fresh tasting and much better than anything you will ever buy in a store! Stuff it in casings for the grill or just make sausage patties, either way, this recipe is delicious! Make a boat load and put them in the freezer to have them at the ready!

Spinach & Feta Chicken Sausage

Ingredients

  • 5 lbs Chicken breast or thighs, cubed

  • 10 oz Frozen spinach, squeezed dry

  • 10 Cloves garlic, minced

  • 2 tbsp EVOO or butter, cubed or grated

  • 1 1/2 – 2 tbsp Kosher salt

  • 1 tbsp Dried oregano or 2 tbsp fresh

  • 2 tsp Lemon pepper

  • 1 tsp Fresh ground black pepper

  • Zest of 2 lemons

  • Juice of 1 lemon

  • 8 – 10 oz Feta cheese, crumbled

Directions

  • Grind cold chicken in meat grinder or food processor with spinach and butter.
  • Mix in the rest of the ingredients in, leaving cheese for last.
  • Form into patties, stuff casings or use for filling.
  • Freeze for up to 3 months if desired.
