Spinach Queso Dip

This Spinach Queso Dip is festive and delicious for really anytime of year! This dip will be a hit at any get together!

Ingredients and Variations

Ingredients: White onion, garlic, red bell pepper, green chilis, spinach, butter, flour, evaporated milk, chicken broth, Monterey Jack cheese, garlic powder, onion powder, cayenne pepper ,powdered chicken bouillon, salt, hot sauce and ground cumin.

Variations: Any onion can be used, any peppers you like can be used hot or mild ( jalapenos, serrano), Use the cheese you like and change up the seasonings to your taste, add more heat if you like spicy.

Cheesy, flavorful Spinach queso dip.

Ingredients

  • 1 small, white onion, chopped

  • 2 cloves garlic, minced

  • 1/2 red bell pepper, diced

  • 1 1/2 tbsp butter

  • 1 1/2 tbsp all purpose flour

  • 1 12oz can evaporated milk

  • 1/4 cup chicken broth (if needed to thin)

  • 1 10oz box frozen chopped spinach, thawed and drained well

  • 1 4oz can diced green chilis

  • 1 tsp onion powder

  • 1/4 tsp garlic powder

  • 1/4 tsp ground cumin

  • 3/4 tsp salt or to taste

  • 1/4 tsp cayenne pepper *optional

  • 4 dashes hot sauce *optional

  • 1/4 tsp powdered chicken bouillon

  • 1 lb Monterey jack cheese, freshly grated from the block

Directions

  • Cook onion, garlic and bell pepper in butter until soft, add flour and cook 3 minutes.
  • Whisk in evaporated milk, add spinach and green chilis, seasonings and broth to thin if needed.
  • Cook until thickened, add in cheese and cook on low until melted and incorporated into a sauce.
  • Serve immediately or put into a crockpot on warm.
