Thai Peanut Chicken Lettuce Cups

Ingredients

  • Chicken Filling
  • 1 qt 1 Canned chicken

  • 1 1 Small onion, chopped

  • 1 1 Carrot, grated

  • 2 2 Cloves garlic, minced

  • 1/2 cup 1/2 Mango salsa

  • Salt & pepper

  • 1 cup 1 Peanut sauce

  • Peanut Sauce
  • 1 1/4 cup 1 1/4 Creamy peanut butter

  • 1/4 cup 1/4 Soy sauce

  • 1/2 cup 1/2 Rice wine vinegar

  • 2 2 Limes, juiced and zested

  • 2 tsp 2 Sesame oil

  • 4 4 Cloves garlic, minced

  • 2 tsp 2 Fresh grated ginger

  • Lettuce Cups & Extras
  • 2 Heads 2 Bib, butter, romaine or 4 little gems lettuce

  • 1 bunch 1 Green onions, sliced

  • 6 6 Radishes, sliced

  • 1/2 cup 1/2 Dry roasted peanuts, chopped

  • 1/2 cup 1/2 Basil, sliced in strips

  • 2 tbsp 2 Toasted sesame seeds

Directions

  • Mix together all ingredients for sauce and set aside.
  • Rinse and drain lettuce.
  • Prepare filling by heating 1 tbsp oil in pan on medium, add onion and cook 3 minutes. Add garlic and carrots, cook another 2 minutes and add drained chicken , 1 cup peanut sauce, salsa, salt and pepper. Heat through.
  • Fill each lettuce leaf with filling, add a little extra peanut sauce over the filling, add radish slices to each and sprinkle the tops with basil, green onion, peanuts and sesame seeds.
