Quick and delicious, this make a great weeknight dinner!
Tuscan Chicken Soup

Ingredients
4 cups Cooked chicken, cubed or shredded
3 qts Chicken broth
1 qt Tomato sauce
3 tbsp Tomato paste
1 Large onion, chopped
2 tbsp Olive oil
8 Cloves garlic, minced
1 cup Spinach, packed
1/2 cup Sun dried tomatoes, chopped
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Italian seasoning
1 tsp Dried parsley
Salt & pepper to taste
3/4 – 1 cup Pasta (I use Ditalini)
3/4 cup Heavy cream
Directions
- Sauté onions and garlic in butter on medium-low, until soft, about 8 minutes.
- Add all other ingredients except pasta and cream. Bring to a boil, then add pasta, turn heat to medium and cook just until pasta is done.
- Remove from heat and stir in heavy cream.

- Serve with garlic croutons and parmesan cheese!
This recipe is sooo goood! I added some fresh chopped zucchini and we all loved it. Got the “it’s a keeper” status from the family so going on regular menu rotation.
Make this the other day and everyone loved it! This was a straight from the pantry as I had everything canned and just got done dehydrating a bunch of spinach. Definitely a keeper!
