Asian Chicken for Pressure Canning

This is a great meal starter, as it can be used to make several dishes! This can be used to make a quick chicken fried rice and its so good!

Asian Chicken for Pressure Canning

Yields 7 quarts

Ingredients

  • 9 lbs Chicken, diced into 1 inch pieces

  • 5 Medium carrots, diced

  • 2 Large onions, chopped

  • 7 Cloves garlic, minced

  • 12 cups Chicken broth

  • 3/4 cup Soy sauce

  • 1 tbsp Onion powder

  • 1 tbsp Ground or fresh ginger

  • 1 1/2 tsp Garlic powder

  • 1/4 – 1/2 tsp Cayenne pepper

Directions

  • Wash jars, lids, rings in hot, soapy water. Prepare pressure canner per canner instructions, filling with water. Bring canner to a low simmer.
  • Add chicken broth to pot with soy sauce, onion powder, garlic powder and ginger. Bring to a boil, cover, turn down heat and simmer 10 minutes or until ready to use.
  • Divide chicken, onions and carrots among jars evenly. Add 1 minced clove of garlic to each jar and fill with broth leaving 1 inch headspace. De-bubble, wipe rimes, place lids and rings fingertip tight. Add jars to simmering pressure canner.
  • Process quarts 90 minutes and pints for 75 minutes.

  1. I am going to try canning this, but do you have recipes for how to use it when its done. You mentioned fried rice which i can handle without recipe, but any other recipes for usage?
