Autumn Hash

Easy oven roasted Autumn hash! Festive, sweet, savory and super delicious!!

1 Small butternut squash, peeled and diced 1 inch peices

2 Sweet potatoes or yams peeled and diced

1 Lage red onion, diced large

1 lb Brussel sprouts prepared and halved or quartered

1/4 Cup maple syrup

2 Tbsp brown sugar (optional)

Fresh thyme

Salt and pepper to taste

1/2 Cup chopped pecans

1/2 Cup dried cranberries

Heat oben to 375 degrees f.

Put all prepared vegetables on a sheet pan and toss in EVOO, Thyme, salt and pepper.

Bake @ 375 degrees f 30 minutes.

Pull vegetables from oven and add maple syrup, brown sugar, pecans and cranberries. Stir together and bake another 10-15 minutes.
