Breakfast Mushroom Tart

1 lb Mushrooms, sliced
1/2 Small onion, diced
2 cloves Garlic, minced
1 sprig Fresh thyme
2 tbsp Butter, unsalted
2 oz Goat cheese
1 oz Parmesan cheese, grated
4 Large eggs
4 slices Bacon, cooked and crumbled
Salt and pepper to taste
1 sheet Puff pastry (1/2 a box)
Directions
- Heat oven to 400°.
- Sauté mushrooms, onion and garlic in butter until soft, about 5 minutes. Salt and pepper them. Cool.
- Roll puff pastry out slightly onto parchment paper. Cut 1/2 inch of the edge off and flip onto the side, making a framed edge on the entire pastry. Dock with a fork. Cover with mushrooms to edge of pastry and bake @ 400° for 15 minutes.
- Make 4 wells in the mushrooms and crack an egg into each well. Dot with goat cheese, salt and pepper eggs, sprinkle with bacon and parmesan. Put the pastry back into the oven and bake for 10 – 12 minutes more, until eggs are as set as you want them.
