Chicken Taco Monster Mash

Shelf stable, one pot wonder with a fabulous name! Healthy and delicious! dinner in 20 minutes with this recipe.

Ingredients and Variations

Ingredients: Canned chicken, chicken broth, jasmine rice, salsa, taco seasoning, salt and pepper.

Variations: Canned beef, ham or spam, use any rice you have on hand, use any seasoning packet you like such as ranch or Italian dressing mix.

Toppings: crushed Tortilla chips or Doritos, shredded cheese, diced onions, tomatoes, shredded lettuce, taco sauce, black olives, sour cream….. anything you have on hand fresh or shelf stable!

Easy one pot meal!

Ingredients

  • 1 quart 1 cooked chicken

  • 1 pint 1 salsa

  • 1 14.5oz can 1 chicken broth or 2 cups of water and 1 tbsp bouillon

  • 1 packet 1 taco seasoning or 2 tbsp homemade taco seasoning

  • 2 cups 2 rice

  • salt and pepper to taste

Directions

  • In a large pot add salsa, broth taco seasoning and juice from the canned chicken to a boil.
  • Rinse rice well.
  • Add rice and chicken to boiling broth, bring back up to a boil, cover lower heat to simmer and cook for 20 minutes. Do NOT remove lid during this process. When done fluff with a fork, add salt and pepper to taste.
  • Serve with desired toppings!
