Easy Pantry Romesco Sauce

This gluten free flavorful romesco sauce takes help from pantry staples and comes together in a flash! After trying this version of romesco, you never go back! The flavor in this sauce is amazing with the roasted red bell peppers and sundried tomato pesto shortcuts, it literally takes 5 minutes to put together.

Ingredients and Variations

Ingredients: Roasted red bell peppers, sun dried tomato pesto, garlic powder, smoked paprika, red wine vinegar, almonds, extra virgin olive oil, salt and pepper.

Variations: Any nut you like can be subbed out for almonds, you can also use more than one kind of nut. Sherry, white wine or white balsamic vinegar can be used instead of red wine vinegar and avocado oil can replace olive oil. Sun dried tomatoes can be swapped out for pesto and switch up the seasonings, use what you have on hand and what your taste buds like!

A shortcut version of romesco sauce with big flavor!

Ingredients

  • 1/2 cup whole almonds

  • 1 12 oz jar roasted red bell peppers

  • 1/4 cup sun dried tomatoes in oil or sun dried tomato pesto

  • 1 tbsp red wine vinegar

  • 2 tsps garlic powder

  • 1/2 tsp salt

  • 1/4 to 1/2 tsp fresh ground black pepper

  • 1/4 tsp smoked paprika

  • 1/4 tsp sweet paprika

  • 1/4 tsp cayenne pepper

  • 1/4 cup extra virgin olive oil

Directions

  • In a hot skillet, with medium – low heat, toast almonds lightly. Be sure not to burn them.
  • Add toasted almonds and the rest of the ingredients except the olive oil, to a food processor. Process until smooth.
    With the processor running, stream in oil slowly.
  • Toss with hot pasta. Add a little pasta water to the pasta if desired.
