Huevos Ahogados (Drowned Eggs)

Ingredients

  • 1 lb Tomatoes, fresh or canned

  • 2 JalapeƱos

  • 1/2 Onion

  • 2 cloves Garlic

  • 1/4 cup Packed fresh cilantro

  • 2 cups Chicken broth

  • Salt an pepper

  • 6 Eggs

  • 2 tbsp Oil

Directions

  • In hot, dry pan blister peppers, tomatoes, onion and garlic. Do not burn garlic.
  • Peel tomatoes, and garlic after roasting. Remove seeds from jalapeƱo and put into blender with cilantro. Puree 3 minutes.
  • Heat oil in same skillet, pour in salsa and cook 3 minutes. Ass chicken broth and simmer 10 minutes. Crack in eggs an poach till they are as done as you want them.
  • Serve with sliced green onion and cotija cheese if desired.
