Huevos Ahogados (Drowned Eggs)

1 lb Tomatoes, fresh or canned
2 JalapeƱos
1/2 Onion
2 cloves Garlic
1/4 cup Packed fresh cilantro
2 cups Chicken broth
Salt an pepper
6 Eggs
2 tbsp Oil
Directions
- In hot, dry pan blister peppers, tomatoes, onion and garlic. Do not burn garlic.
- Peel tomatoes, and garlic after roasting. Remove seeds from jalapeƱo and put into blender with cilantro. Puree 3 minutes.
- Heat oil in same skillet, pour in salsa and cook 3 minutes. Ass chicken broth and simmer 10 minutes. Crack in eggs an poach till they are as done as you want them.
- Serve with sliced green onion and cotija cheese if desired.
