Pumpkin and Sausage Rigatoni Bake

Creamy and cheesy pumpkin sauce with sausage and rigatoni rigatoni is a perfect fall meal, stick to your ribs delicious! An easy dish made with canned pumpkin.

Ingredients and Variations

Ingredients: Rigatoni pasta, sweet Italian sausage, yellow onion, spinach, butter, flour, milk, chicken bouillon, garlic, garlic powder, onion powder, dried parsley, solid packed pumpkin (canned), parmesan cheese, smoked mozzarella cheese, mozzarella cheese, salt and pepper. Smoked mozzarella cheese tops our pasta here.

Variations: Any shape pasta can be used, hot Italian or even breakfast sausage can be substituted. sweet onion or white onion can be used, chicken broth can be used in place of milk and add a splash of heavy cream, dried or freeze dried spinach or kale can be used in place of fresh greens, home canned pumpkin can be mashed and used in place of commercial, Smoked gouda cheese can be used instead of mozzarella cheese.

Festive and delicious pasta with a creamy pumpkin sauce.

Ingredients

  • 1 lb Sweet Italian Sausage

  • 1 Small onion, chopped

  • 2 cups fresh packed spinach leaves

  • 1 lb rigatoni pasta, cooked per package instructions

  • 1/2 cup butter

  • 1/2 cup all purpose flour

  • 4 cups whole milk

  • 1/2 cup pumpkin puree

  • 1/2-1 tsp chicken bouillon powder

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp dried parsley

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp fresh grated nutmeg

  • 1/2 cup parmesan cheese, grated

  • 4 oz smoked mozzarella or gouda cheese

  • 2 cups mozzarella cheese, shredded

Directions

  • heat oven to 350°
  • Cooke sausage and onions together on medium heat until sausage is browned completely, add in spinach and cook down. Mix with cooked pasta and put into a greased 9×13 in baking pan.
  • Pumpkin cream sauce: Melt butter in pan with 2 garlic cloves, add flour making a roux and cook for 3 minutes or untill slightly browned, Slowly whisk in milk, pumpkin and parmesan cheese. Add seasonings and pour over pasta and sausage mixture. Top with mozzarella cheeses and bake at 350° for 30 minutes or until cheese browns slightly.
